Only 2 weeks until Memorial Day & time to put on your bathing suit. If you are feeling bloated, detoxify with asparagus soup – a natural diuretic & well known for detoxifying properties. This is a light soup and it is a perfect way to add vegetables into your diet. I have also enjoyed this soup when cooled and it tastes great!
2 Quarts Vegetable Broth
2 Tablespoons Oil Olive
2 Shallots (chopped)
1 Leek (white part washed and chopped)
1 Tablespoon Garlic (minced)
3 bunches Asparagus (washed and chopped into 2” pieces)
½ Tsp. salt
½ Tsp. white pepper
Note: I use organic ingredients and sea salt whenever possible.
Suggestions for preparation: An immersion blender works wonders!
Cook vegetable broth over low heat.
Separately, cook olive oil over medium heat in a large skillet. Add-in shallots and leeks and stir often until tender (5 minutes). Add garlic, asparagus, salt, and pepper. Stir and continue cooking until tender (8 minutes).
Carefully move the contents of skillet into the soup broth. Boil. Move pot to a cool burner on stovetop. Use immersion blender to blend contents until the soup mixture is nice and smooth.
Place pot over heat again and simmer before serving.
If you like cream, try some coconut cream with fresh dill sprinkled on top of this light, clean soup!
