This Easy Turkey Chili Recipe is great for weeknight dinners or you can take it to work for lunch. Pair the chili dish with a green salad and light dressing for a low calorie, high fiber meal!

The above picture is of two bowls of chili. One bowl of Easy Turkey Chili has sour cream, shredded cheese and ground turkey. The other bowl does not have sour cream, shredded cheese or ground turkey making it a suitable vegetarian or vegan dish. Very little fuss and very big flavor – yum!

1 lb.  lean ground turkey (93/7)
1 lg.  onion, chopped
14.5 oz. diced tomatoes, drained
1-1/2 cups tomato sauce
3 Tbsp green chili peppers, drained & chopped
2 tsp. chili powder
1 tsp. ground cumin
15 oz. kidney beans, drained & rinsed
1 cup brown rice (optional)

In a large skillet or Dutch oven, cook turkey with onion until turkey is browned, about 10 minutes. Stir in tomatoes, tomato sauce, chili peppers, chili powder, and cumin. Bring to a boil. Add kidney beans and simmer for 10 minutes. Serve over brown rice, if desired.
